[Makes 8-10 gingerbread cookies]

ingredients:

  • 37g smul Vanilla Protein Powder (1 serving)
  • 130g Almond Flour
  • 1 tsp Cinnamon
  • 1 tsp Ground Ginger
  • 1/4 tsp Nutmeg
  • 1/4 tsp Baking Soda
  • 30g Coconut Sugar
  • 1 Tbsp Molasses 
  • 50g Coconut Oil
  • 1 tsp Vanilla Extract
  • 2 Tbsp Milk of choice (plant-based milk for vegan)

instructions:

  1. Mix the Dry Ingredients:
    In a large bowl, combine oat flour, almond flour, vanilla Protein Powder, cinnamon, ginger, nutmeg, baking soda, and sugar substitute. Stir until evenly blended.
  2. Incorporate the Wet Ingredients:
    Add the coconut oil, molasses, vanilla extract, and milk to the dry ingredients. Mix until the dough begins to come together. Use your hands if needed to form a thick, cohesive dough.
  3. Chill the Dough:
    Cover the dough and refrigerate for 1 hour. Chilling helps the dough firm up and ensures the cookies maintain their shape while baking.
  4. Prepare for Baking:
    Preheat your oven to 350°F (175°C). Roll out the chilled dough on a flat surface to your desired thickness. Use parchment paper to prevent sticking.
  5. Cut Out Shapes:
    Use cookie cutters to create festive shapes. Gently transfer the cookies to a baking sheet lined with parchment paper. Roll out any remaining dough and repeat.
  6. Bake the Cookies:
    Bake in the preheated oven for 12 minutes. The cookies will be soft when removed but will firm up as they cool.
  7. Cool Completely:
    Transfer the cookies to a wire rack and let them cool for at least 1 hour. They will continue to harden, reaching the perfect texture.
