ingredients: 

  • ½ cup sweet corn kernels
  • 120g apple puree
  • ½ cup milk (or choice of plant milk)
  • 1 egg, beaten lightly (alternative for vegan: 1 banana)
  • 2 Tbsp olive oil
  • ¾ cup unbleached all purpose flour
  • ¾ cup oat flour (blended oats)
  • 2 Tbsp cornflour
  • 2 Tbsp honey (optional*)
  • 2 tsp baking powder
  • 1 tsp salt
  • ½ tsp paprika
  • 4 Tbsp smul vanilla protein powder

instructions:

  1. Preheat your oven to 180°C
  2. Place ½  cup of corn and the milk of choice into your bowl and mix well.
  3. Add the beaten eggs (or banana) and olive oil.
  4. Add the oat and all purpose flour, cornflour, honey, baking powder, salt, and paprika to the bowl. Mix until incorporated and evenly moist.
  5. Pour the batter into the prepared sprayed pan.
  6. Bake the cornbread for 35-40 min. Until a toothpick inserted into the center comes out clean.
  7. Cool the bread in the pan for 5 minutes before turning the bread out onto a wire rack to continue cooling.
  8. Serve warm and enjoy with your desired spread!
