ingredients:
- ½ cup sweet corn kernels
- 120g apple puree
- ½ cup milk (or choice of plant milk)
- 1 egg, beaten lightly (alternative for vegan: 1 banana)
- 2 Tbsp olive oil
- ¾ cup unbleached all purpose flour
- ¾ cup oat flour (blended oats)
- 2 Tbsp cornflour
- 2 Tbsp honey (optional*)
- 2 tsp baking powder
- 1 tsp salt
- ½ tsp paprika
- 4 Tbsp smul vanilla protein powder
instructions:
- Preheat your oven to 180°C.
- Place ½ cup of corn and the milk of choice into your bowl and mix well.
- Add the beaten eggs (or banana) and olive oil.
- Add the oat and all purpose flour, cornflour, honey, baking powder, salt, and paprika to the bowl. Mix until incorporated and evenly moist.
- Pour the batter into the prepared sprayed pan.
- Bake the cornbread for 35-40 min. Until a toothpick inserted into the center comes out clean.
- Cool the bread in the pan for 5 minutes before turning the bread out onto a wire rack to continue cooling.
- Serve warm and enjoy with your desired spread!
