Layers of crisp vegetables, tender udon noodles, and your choice of protein sit on a base of rich, umami-packed miso tahini dressing. Ideal for meal prep, they’re fresh, nourishing, and full of flavor - just shake, toss, and enjoy.
Makes 2 servings
For the dressing:
- 60g Tahini
- 1 tbsp Soy Sauce
- 1 tbsp Honey
- 1 tsp Miso Paste
- Juice of 1 lime
- Water to thin
For the Jars
- 200g Udon Noodles
- 100g Cabbage
- 2 Carrots
- 1/2 a Cucumber
- 200g Cooked Chicken (or protein of your choice)
Method:
- In a small bowl, whisk together the tahini, soy sauce, honey, miso paste, and lime juice until smooth. Gradually add water, a tablespoon at a time, until the dressing reaches your desired consistency.
- Prepare the udon noodles according to the package instructions. Drain and rinse under cold water to stop the cooking process, then set aside.
- Finely shred the cabbage, peel the carrots into ribbons, and slice the cucumber into thin rounds.
- Divide the dressing evenly between the bottoms of two large jars or containers. Layer in the cooked noodles, cabbage, carrots, and cucumber, followed by the cooked protein.
- Seal the jars and store in the fridge for up to 2 days. When ready to eat, shake the jar, and tip the contents into a bowl.
