These Chocolate Zucchini Protein Muffins are family-friendly, lunchbox-ready, and the perfect way to sneak in extra veggies. Packed with smul protein, they deliver balanced fuel without compromising on taste. With just 8 simple ingredients, and in one bowl, they’re quick and easy to make and are absolutely delicious!
Ingredients:
- 200g Zucchini
- 80g Honey
- 80g Greek Yogurt
- 2 Eggs
- 3 tbsp Olive Oil
- 100g Self-Raising Flour (or 100g All-Purpose Flour + 1 tsp Baking Powder + ¼ tsp Baking Soda)
- 30g Cocoa Powder
- 60g @smul.lifestyle Vanilla Protein Powder
- 30g Dark Chocolate Chips
Method:
- Preheat your oven to 180°C (350°F) and line a 6-cup muffin tin with paper liners or lightly grease it.
- Blend the zucchini until very fine, or finely grate it. There’s no need to squeeze out any liquid.
- In a large mixing bowl, whisk together the blended zucchini, honey, Greek yogurt, eggs, and olive oil until smooth.
- Add in the flour, cocoa powder and smul Vanilla Protein Powder, and fold until just combined.
- Divide the batter evenly among the 6 muffin cups. Sprinkle the dark chocolate chips evenly on top of each muffin.
- Bake for 25-27 minutes, or until a toothpick inserted into the center comes out clean.
- Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack. Perfect for meal prep, lunchboxes, or a healthy snack.
