These Chocolate Zucchini Protein Muffins are family-friendly, lunchbox-ready, and the perfect way to sneak in extra veggies. Packed with smul protein, they deliver balanced fuel without compromising on taste. With just 8 simple ingredients, and in one bowl, they’re quick and easy to make and are absolutely delicious!

Ingredients:

  • 200g Zucchini
  • 80g Honey
  • 80g Greek Yogurt
  • 2 Eggs
  • 3 tbsp Olive Oil
  • 100g Self-Raising Flour (or 100g All-Purpose Flour + 1 tsp Baking Powder + ¼ tsp Baking Soda)
  • 30g Cocoa Powder
  • 60g @smul.lifestyle Vanilla Protein Powder
  • 30g Dark Chocolate Chips

Method:

  1. Preheat your oven to 180°C (350°F) and line a 6-cup muffin tin with paper liners or lightly grease it.
  2. Blend the zucchini until very fine, or finely grate it. There’s no need to squeeze out any liquid.
  3. In a large mixing bowl, whisk together the blended zucchini,  honey, Greek yogurt, eggs, and olive oil until smooth.
  4. Add in the flour, cocoa powder and smul Vanilla Protein Powder, and fold until just combined.
  5. Divide the batter evenly among the 6 muffin cups. Sprinkle the dark chocolate chips evenly on top of each muffin.
  6. Bake for 25-27 minutes, or until a toothpick inserted into the center comes out clean.
  7. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack. Perfect for meal prep, lunchboxes, or a healthy snack.
