Soft, chocolatey and naturally sweet, these protein breakfast cookies are about to become one of your favourite meal-prep staples.

Made with simple, wholesome ingredients such as rolled oats, ripe banana, nut butter and smul Protein Powder, they contain a satisfying combination of fibre, slow-releasing carbohydrates, healthy fats and protein.

They’re perfect for busy mornings when you need something convenient, or as an easy on-the-go snack during the day.

You can use any smul Protein Powder flavour you love. We used smul Café Latte Protein Powder for a delicious cappuccino-inspired flavour that pairs perfectly with the dark chocolate chips. ☕️🍫

Make a batch, store them in the fridge and you’ll have breakfast sorted for the week.

Protein Breakfast Cookies

Makes: 8 medium cookies
Preparation time: 10 minutes
Baking time: 10–14 minutes

Ingredients

  • 2 ripe medium bananas, mashed (220g)
  • 1 cup rolled oats (90g)
  • ½ cup smul Café Latte Protein Powder (60g)
  • ⅓ cup nut butter (80g)
  • ¼ cup chocolate chips (40g)
  • 1–2 tablespoons milk or water, if needed

Method

  1. Preheat your oven to 180°C and line a baking tray with baking paper.
  2. Add the bananas to a mixing bowl and mash until smooth.
  3. Stir in the nut butter until fully combined.
  4. Add the rolled oats, smul Protein Powder and chocolate chips. Mix well.
  5. If the mixture feels too dry, add one or two tablespoons of milk or water.
  6. Divide the mixture into eight portions and roll each portion into a ball.
  7. Place the balls onto the prepared baking tray and gently flatten them into cookie shapes.
  8. Bake for 10–14 minutes, or until the cookies are set and lightly golden around the edges.
  9. Allow them to cool slightly before enjoying.

Any smul Protein Powder flavour will work beautifully in this recipe, so you can choose your favourite.

For a rich, coffee-inspired cookie, use smul Café Latte Protein Powder with dark chocolate chips. Vanilla or Chocolate Protein Powder would also be delicious options.

Once the cookies have cooled completely, place them in an airtight container and store them in the fridge. They’re an easy breakfast or snack to grab when you’re heading out the door.
