Ingredients
- 120g oat flour
- 60g smul Vanilla Protein Powder
- 1 teaspoon baking powder
- 1 teaspoon ground cinnamon
- 1 tablespoon ground flaxseeds
- 1 egg
- 2 tablespoons olive oil
- 125g Greek yoghurt
- 125ml milk
- 1 apple, grated
- Whole rolled oats for topping, optional
Method
- Preheat your oven to 180°C and line a muffin tin with six large muffin cases. Alternatively, lightly grease a silicone muffin tray.
- Add the oat flour, smul Vanilla Protein Powder, baking powder, cinnamon and ground flaxseeds to a large mixing bowl.
- Whisk the dry ingredients together until evenly combined.
- Add the egg, olive oil, Greek yoghurt, milk and grated apple.
- Mix until the ingredients are well combined and a smooth batter forms.
- Divide the batter evenly between the six prepared muffin cases.
- Top each muffin with a small pinch of whole rolled oats, if using.
- Bake for 20–22 minutes, or until the muffins are lightly golden on top.
- Allow them to cool in the tin for five minutes before transferring them to a wire rack.
