Chocolate Peanut Butter Rice Cake Bites

Crunchy, chocolatey and naturally sweet, these Chocolate Peanut Butter Rice Cake Bites are an easy meal-prep treat made with simple ingredients.

The combination of smooth peanut butter, crispy rice cakes, dark chocolate and smul Caramel Protein Powder creates a delicious balance of creamy, crunchy and sweet in every bite.

We used smul Caramel Protein Powder for an indulgent caramel flavour, but you can use any smul Protein Powder flavour you love. Make a batch, store them in the fridge and enjoy them whenever you need a convenient snack or something sweet. 🥜🍫

Chocolate Peanut Butter Rice Cake Bites

Makes: 10–12 bites
Preparation time: 15 minutes
Setting time: Approximately 30 minutes

Ingredients

  • 100g smooth peanut butter
  • 60g honey or maple syrup
  • 60g smul Caramel Protein Powder, or your preferred flavour
  • 60ml milk
  • 4 rice cakes
  • 100g dark chocolate
  • A pinch of salt, optional
  • 1 teaspoon coconut oil, optional
  • Chopped nuts for topping, optional

Method

  1. Add the peanut butter, honey or maple syrup, smul Protein Powder and milk to a bowl. Whisk until smooth. Add a pinch of salt if you are using unsalted peanut butter.
  2. Crush the rice cakes into small pieces and fold them into the peanut butter mixture.
  3. Divide the mixture into 10–12 portions and roll each portion into a ball.
  4. Place the balls onto a plate and refrigerate while you melt the chocolate.
  5. Melt the dark chocolate in the microwave, stirring every 30 seconds to prevent it from burning. Alternatively, melt it using a double boiler. Add a teaspoon of coconut oil for a thinner consistency, if needed.
  6. Dip each rice cake bite into the melted chocolate until coated, then sprinkle with chopped nuts, if using.
  7. Place the coated bites onto baking paper and refrigerate until the chocolate has set.
  8. Enjoy!

Which smul Protein Powder should you use?

We used smul Caramel Protein Powder for a rich caramel and peanut butter combination. Chocolate Protein Powder would create an even more chocolatey bite, while Vanilla Protein Powder would keep the flavour light and balanced.

Storage tip

Store the bites in an airtight container in the fridge once the chocolate has set. This makes them easy to prepare ahead of time and enjoy throughout the week.
